Mini Mummy Cupcakes

I just moved into my new home (4 days ago). Yipee! It’s gorgeous. Absolutely gorgeous and it already feels like home. I will try to take some nice pictures of my kitchen which is a gem and a baking haven.

This recipe was not made in my new kitchen for the oven wasn’t plugged in in time for Halloween. I was trying to find a cute and mouth-wateringly scary cupcake and came across a picture of Mummy cupcakes. My son aka Zorro helped me put the eyes on each cupcake. I never thought my 4-year-old could have that much patience, but considering the task involved sugar-coated cereal, I suppose it wasn’t too tasking for him.

My daughter aka the tiny Magician did a great magic trick. She made a cupcake disappear inside her heart-shaped mouth.

Makes 24 mini cupcakes

Chocolate Cupcake

1 cup all-purpose flour

½ tsp salt

½ tsp baking soda

1 tsp baking powder

½ cup unsweetened cocoa powder

¾ cup granulated sugar

½ cup butter, room temperature

¼ cup cream cheese

1 egg

½ cup milk

1 tsp vanilla extract

  1. Preheat the oven to 350 F or 180 C. Line a mini muffin pan with paper liners of your choice.
  2. Mix flour, salt, baking soda, baking powder, and cocoa powder.
  3. Cream the butter with the sugar until mixture is white and fluffy. Add the egg and the cream cheese and whisk until incorporated.
  4. Beat in the milk and the vanilla.
  5. Divide the dough equally amongst wrappers. Bake for 12-13 minutes or until cupcakes are puffed up and a toothpick comes out with just a few moist crumbs attached.

Chocolate Ganache

100 g bittersweet chocolate

2 tbsp butter

  1. Melt the chocolate and butter in the microwave (1 min).
  2. Holding the cupcakes by the bottom, dip the top in the ganache and swirl until well coated.
  3. Leave to harden 10 minutes before piping out white icing.

Vanilla Icing

2 cups powdered sugar

¼ cup butter, melted

1 tsp vanilla extract

2 tbsp boiling water

Cheerios or MM’s for mummies’ eyes

  1. Whisk all ingredients until smooth.
  2. Place in a piping bag and snip off a fine tip.
  3. Ice in zigzag motion.
  4. Place 2 MMs or 2 Cheerios on each cupcake to make the eyes of the mummy.
