Mini Cherry Cakes with Fresh Orange Syrup

It isn’t quite cherry season, but it’s coming. The trees in Geneva are smattered in pinks and whites, and the parks are bursting with life. It’s as if the entire city had been in hibernation and is only now waking up.


To start off this spring day, I made mini cherry cakes. This recipe is inspired by FoodieCrush, a food blogger whose website is truly gorgeous. Heidi made hers with lemon and rosemary and dried cherries. I opted for orange, fresh cherries, and no herbs. I love fresh herbs, but in savory dishes more than in dessert. I also decreased the amount of sugar in the cakes and in the syrup. Oranges are sweeter than lemons and, if you’re anything like me, there is something truly magnificent about the tartness of cherries.

Makes 8 mini cakes


Cherry Cake


¾ cup (180 g) butter, room temperature

1/2 cup sugar

1 orange, finely zested

3 eggs

¼ tsp salt

½ tsp baking powder

1 ½ cup all-purpose flour

½ cup pitted cherries (I used store-bought, pre-pitted dark cherries)


1.      Preheat oven to 350 F or 180 C. I used little disposable cake molds in which you can bake dough.

2.      In the bowl of an electric mixer, cream the butter and the sugar until white and fluffy. Add the orange zests and the eggs and beat until combined.

3.      Sift the salt, baking powder and the flour, then add it into your cake batter. Whisk until batter is smooth.

4.      Fold in the cherries.

5.      Bake for 20 minutes or until a cake tester comes out clean.

6.      Prepare your syrup while your cakes are baking.




Fresh Orange Syrup

½ orange, juiced and zested

½ cup sugar

¼ cup water


1.      In a small saucepan, heat the orange juice, orange zest, sugar and water on high heat.

2.      Whisk until sugar dissolves completely, about 2-3 minutes.

3.      Ladle a spoonful of syrup over each mini cake. They will soak it up and become super moist.
