Banana-Maple Whole Wheat Cupcakes

Maple Banana Whole Wheat Cupcakes Happy First Birthday Adrien! A year ago today I gave birth to a ridiculously easy and happy baby boy, and in my completely unbiased eyes, the most perfect little baby in the world ;-). And today he turned one! Cue the hysterically sobbing mother “My baby’s not a baby anymore…waaaah!” Anyway, to celebrate this important milestone I baked him extra-special cupcakes. These can also be considered healthy for all you grown-ups! And of course they’re perfect for kids, as long as your pediatrician okays wheat and eggs for your little ones. Serve with ice cream or maple-cinnamon whipped cream. Enjoy!

Recipe:

Banana-Maple Whole Wheat Cupcakes:

Makes 12 cupcakes

3/4 cup vegetable oil

1/2 to 3/4 cup dark maple syrup (depending on how ripe your bananas are, you can adjust this amount)

1 1/2 cups whole wheat pastry flour

1 tsp baking powder

1 tsp baking soda

1/4 tsp salt

2 eggs

1 cup mashed bananas

  1. Preheat your oven to 350˚F. Line a standard cupcake pan with liners of your choice and set aside.
  2. In a large bowl combine the oil, maple syrup and eggs. Whisk to combine.
  3. Add the flour, baking powder, baking soda and salt. Stir.
  4. Fold in the bananas.
  5. Divide the batter evenly, filling each cupcake wrapper to about 3/4 full.
  6. Bake for 18-20 min or until a toothpick comes out clean.
  7. Allow to cool and serve!
