Awesome Diet Brownies

At this point you’ve read the title and you’re probably thinking that these are going to taste awful and be dry and gross like most diet food is. But I wouldn’t post this recipe if I didn’t think these brownies would knock your socks off. Seriously. Beyond being diet, these are probably some of the best brownies ever. Totally fudgy and decadent and just plain delicious. My husband who objects to anything with the word diet in it, loved these. No joke. So please please try this recipe, even if you’re not dieting. A quick calorie calculation bring these guys to 131 calories per brownie. Awesome! And there’s nothing artificial in these either. Enjoy!

Recipe:

Awesome Diet Brownies (adapted from “Made-Over Deep Dish Brownies”):

Makes 16 brownies 

3 tbsp unsalted butter (cold is fine)

2 tbsp vegetable oil

4 oz semisweet chocolate, chopped (or 2 oz semisweet and 2 oz bittersweet ~ you need the semisweet for sweetness because there’s not a whole lot of sugar)

3/4 cup light brown sugar, lightly packed

2 tsp vanilla extract

2 large eggs, cold

3 tbsp espresso (more-or-less to taste, I prefer more. It just gives the brownies a richer flavor.)

1/4 cup unsweetened cocoa powder

3/4 cup all-purpose flour

1/2 tsp baking soda

  1. Preheat your oven to 325˚F. Prepare an 8-in x 8-in brownie pan by lightly greasing it with nonstick spray or use a silicone brownie pan. Set aside.
  2. In a large bowl combine the butter, oil, and chocolate. Melt in the microwave 30 seconds at a time, stirring in between, until completely smooth.
  3. Add the brown sugar and vanilla and mix until smooth.
  4. Mix in the eggs until the batter is nice and glossy.
  5. Add the espresso and cocoa powder. Again stir.
  6. Finally add the flour and baking soda and mix just to combine.
  7. Pour the batter into your pan, scraping the bowl as needed.
  8. Bake for 25-30 minutes. I recommend staying closer to 25 minutes for a fudgier, moist brownie.
  9. Allow to cool and then cut into 16 equal pieces and serve.
