Caramelized Banana Bread

Sticky and moist. That would be my description of this banana bread. It’s sweet, but the nuts offset the sugar content and the whole wheat flour makes the flavor even denser. Great for any time of day.

Makes 1 loaf


4 bananas
1 cup white sugar
1 cup water
2 tsp coarse sea salt, divided
80 g whole wheat flour
80 g all-purpose flour
2 tsp baking powder
1 tsp baking soda
1 tbsp vanilla extract
½ cup + 2 tbsp or 180 ml vegetable oil
60 g light brown sugar
½ cup 2% milk
2 eggs
1 cup coarsely chopped walnuts

1. Preheat your oven to 350°F and line a loaf pan with parchment paper.
2. In a small saucepan over medium heat, warm the water, the white sugar, and 1 tsp of salt. Simmer until the mixture turns amber. Pour on the bottom of your loaf pan.
3. Slice two of the bananas and scatter them over the caramel.
4. In a stand mixer or by hand, whisk the eggs, the sugar, and the vanilla. Add the oil and the milk, then all the dry ingredients.
5. Fold in the two remaining mashed bananas and the walnuts. Pour the batter over the banana slices.
6. Bake for approximately 40 minutes or until a tester comes out clean.
