Healthier Double Dark Chocolate Cookies

You’re probably wondering what makes these cookies healthier. So here goes. Besides the uncontestable mood-boosting effects of chocolate, they are made with coconut oil and coconut (palm) sugar, as an alternative to butter and sugar. In this case healthier does not mean low-calorie (sorry guys) but it does mean better for you. If you google coconut oil and coconut sugar you will find a plethora of information regarding the health benefits of both. So read up and then enjoy these delicious cookies with a lot less guilt!

Recipe:

Healthier Double Dark Chocolate Cookies:

Yields approximately 20 cookies

6 oz bittersweet chocolate, chopped

6 tbsp coconut oil

1/2 cup unsweetened cocoa powder

2/3 cup coconut (palm) sugar

2 eggs

1 tsp vanilla extract

1/4 cup all-purpose flour

1/4 tsp baking powder

1/4 tsp salt

3/4 cup mini-chocolate chips semi-sweet

  1. Preheat the oven to 350˚F. Line two baking sheets with parchment paper or silpats.
  2. In a small saucepan over medium-low heat, melt the chocolate and coconut oil. Stir until completely smooth. Add the cocoa powder, whisk and set aside.
  3. In a large mixing bowl, whisk together the sugar, eggs and vanilla. Add the chocolate mixture and mix until thoroughly combined.
  4. Add the flour, baking powder and salt and stir just to combine.
  5. Fold in the chocolate chips.
  6. Scoop out the cookie dough in approximately  2 tablespoonfuls onto your prepared baking sheets.
  7. Bake for 10-11 minutes. Allow to cool on the baking sheets for 10 minutes and then transfer the cookies to a cooling rack. They keep very well in an airtight container at room temperature.
