Golden Syrup Cake

What to do with an open can of golden syrup—apart from the to-die-for golden syrup pudding (another British delicacy that everyone needs to taste once in their life)? I decided to bake a cake.

200 g salted butter, room temperature

80 g brown sugar

350 g golden syrup (UK specialty sugar syrup)

2 eggs

300 ml milk (I used 2%)

450 g all-purpose flour

2 ½ tsp baking powder

  1. Preheat the oven to 300°F.
  2. In a bowl, cream the butter and the sugar. Then pour in the golden syrup, the eggs, and the baking powder, and whisk until batter is smooth. Add the milk and the flour, alternating until both ingredients are fully incorporated.
  3. Pour in your baking dish and bake for 50 min to 1 hour, or until the cake top is golden.
