Golden Syrup Oat Squares

This is a recipe given to me by my English friend, Catherine. It is incredibly good, like pretty much all British desserts. The nut/dried fruit mixture listed below is just one combination amongst many. You could substitute the raisins for dried cherries, the apricots for dried peaches, the pecans for walnuts… Play around with it until you find your perfect match.


80 g butter

80 g brown sugar

60 g golden syrup (UK specialty sugar syrup)

½ tsp salt

130 g oats

35 g chopped dried apricots

35 g dried cranberries

35 g dried raisins

25 g dried coconut

25 g pecan pieces

25 g sunflower seeds


  1. Preheat the oven to 350°F. Line a baking dish with greased parchment paper.
  2. In a saucepan, melt the butter, sugar, and golden syrup until the sugar dissolves.
  3. Off the heat, mix in the rest of the ingredients.
  4. Pour in your baking dish and bake for 18-20 min. The oat squares harden as they cool down which makes it easier to cut.
