Peaches in Red Wine

Here is a summer dessert just in time for peach and bathing suit season.

For 4-6 people :

4 peaches

20 g of white sugar

1 ¼ cups red wine

8 cubes of brown sugar

1 cinnamon stick

  1. Prepare an ice bath (cold water + ice cubes in a large bowl). Place a pot of water over high heat. Slide the peaches into it once the water is boiling. Wait 30 seconds, then, with a slotted spoon, take them out of the hot water and put them in the ice bath. After a minute or two, you will be able to peel them.
  2. Cut the peaches in quarter and take out the pit. Place them in a bowl and sprinkle with all of the white sugar. Let them sit for an hour.
  3. In a pan, bring the red wine, cinnamon stick, and cubes of sugar to a boil. Turn the heat to low, and simmer the peach quarters for 12 minutes.
  4. With a slotted spoon take the peaches out of the wine and divide them amongst your serving bowls.
  5. Turn the heat to med-high, and boil the wine mixture until it coats your spoon (approximately 7 minutes).
  6. Ladle the wine syrup evenly amongst the bowls. Serve at room temperature with a scoop of vanilla ice cream or whipped cream.
