Blueberry Pancakes

Pancakes are probably my favorite thing to eat in the morning (My son inherited that trait as you can see below, and hopefully, so will my daughter). I make them so often I know the recipe by heart. Granted my recipe consists of only five ingredients.

1 1/4 cups flour (you can do ½ whole-grain, ½ all purpose flour)

1 cup buttermilk

1 egg

1 tsp of kosher salt

1 tbsp of baking powder

1/3 cup blueberries

  1. Either in an electric mixer or in a bowl, whisk all the ingredients together until your batter is silky smooth.
  2. Heat a non-stick pan over med-high heat and ladle the mixture in. It will spread, then start bubbling (about 1-2 min). At this point, with a spatula, flip them over and brown the other side.
  3. Serve warm with maple syrup and butter.
  4. You can make them ahead of time and freeze them. They’ll still be wonderful.
