Fluffy Chocolate Cake

The words light and chocolate seldom go together. In this case, they describe this moist loaf cake perfectly. For avid chocoholics, I would recommend adding chocolate chips.

1/2 cup sweetened cocoa powder
1/2 cup hot water
1/4 cup milk
½ cup butter, softened
¼ cup sugar
1 tsp vanilla essense
2 large eggs
2 tsp coarse sea salt
1 cup flour
1 tbsp baking powder
1. Preheat the oven to 350°F and grease a loaf pan (this is not necessary if you are using a silicone mold).

2. Combine the cocoa powder, the water, and the milk, and set aside.

3. In a mixing bowl, cream the butter, the sugar, and the vanilla extract. Add the eggs, one at a time, then the salt and the baking powder,

4. In alternating batches, mix in the hot chocolate and the flour.

5. Pour the mixture into your loaf pan and bake for 35-40 minutes or until a tester comes out clean.
