Brownies

So when your friend tells you that his wife slept talked and said: “mmmm Samantha’s brownies”, well I don’t know how you feel, but that to me is some of the highest praise I have ever received. Someone has literally had dreams about my brownies (not to toot my own horn.) Awesome! These brownies are fudgy and chocolaty and absolutely delicious and I hope they incite you or a passer-by who gets a bite to dream of my brownies too. Enjoy!

Brownies (adapted from the recipe Frosted Chocolate Brownies by Elinor Klivans):

3/4 cup unsalted butter, melted and hot

5 oz unsweetened, good-quality, chocolate, chopped

2 tbsp unsweetened, good-quality, cocoa powder

1 cup all-purpose flour

1/4 tsp salt

4 large eggs

1 cup granulated sugar

1 cup brown sugar, lightly packed (or 1 cup brownulated)

1 tsp vanilla extract

  1. Preheat your oven to 325˚F. Foil and butter an 8×8 in pan and set aside.
  2. In small microwave-safe bowl melt the butter until very hot. In a separate bowl, place all your chopped chocolate and pour the melted butter over it. Stir until smooth and the chocolate is completely melted. Add the unsweetened cocoa powder and set aside to cool.
  3. In a large mixing bowl, whisk the eggs and sugars until well blended.
  4. Add the chocolate mixture and whisk until thoroughly combined.
  5. Add the vanilla, flour and salt and mix just to combine.
  6. Pour the brownie batter into the prepared pan and bake for 40-45 min until a toothpick comes out cleans with just a few crumbs. Feel free to underbake them a bit if you like a really fudgy, wet brownie.
  7. Carefully lift them out of the pan using the foil (which will cool down as soon as it hits room temp) and place them on a wire rack to cool.
  8. Cut them into whatever size you want (I like bite-size) while they are still warm and enjoy the delicious brownie goodness.
